‘Three wonderful hops made their way into this rich and complex Vintage ale – Talus with its grapefruit and roses, our old favourite Strisselspalt from central Europe – and the still as yet unnamed experimental hop HBC-638 with its wonderful citrus and stone fruits. The bitterness is still robust in this three-year-old beer and well balanced against its generous malt character and will reward drinkers in the wintertime with its warming

‘This delicious Vintage used Huell Melon, an aromatic hop from Germany, alongside El Dorado from the USA (in fact, a neomexicanus hop for you beer nerds!) with its watermelon and stone fruit aromas. Four years down the track, it rewards drinkers with rich warming malt sweetness that is complemented with a low and smooth residual bitterness. Tasted July 2026: 'This beer was brewed with carefully malted Compass barley, which is widely used for malt whisky, whilst bittering and flavouring came from two US hop varieties Cashmere and Ekuanot, along with Eclipse from Australia.
These all worked well to impart wonderful citrus flavours balanced by herbs and spices. Now its five years old, these flavours are barely perceptible and the bitterness highly subdued, giving a very warming sweetness with dark fruits and Glacé cherry notes that will warm you on winter nights.' - Dave Medlyn, Technical Brewer

Tasted July 2026: 'An astonishing Vintage Ale, this beer used no less than six different hops, which remains the record number in any of our Vintages to this day, and at 70BU was equalled only by the 2023 Vintage. Even with very careful cellaring, almost all these hop characters have become very subdued, leaving a wonderful warming flavour of Christmas cake and raisins. Those lucky enough to still have some in their cellar will be well rewarded to taste this beer at around 4-6 degrees C in a long-stemmed tulip glass.' - Dave Medlyn, Technical Brewer.
